For this theme I made Smoked Chicken, Cherry and Avocado Salad, which is in my ‘ripped from magazines’ folder- in this case an old 2005 delicious magazine.

The only modification I made was to make it for 1 person and not 4 people.
Would I make it again- a definite YES, it was delicious, with the cherries adding the right amount of sweetness, and the almonds adding texture and crunch to the salad. A perfect summer dish.
